Cultivation And Growing Of Coffee

‘’As a rule, good seed is planted in good soil.’’

The volcanic soil and high altitude of the East African region are the golden cradle where the good coffee tree grows (like a child).

Growing an excellent coffee in this fertile region of nature is a matter of human labour and ingenuity.

Fallow land, good maintenance and tree rejuvenation are integral parts of the process of obtaining quality coffee beans. in particular, the farmers requires financial support for the tree rejuvenation period. The high yield and high quality potential of young trees compensates for the cost of rejuvenation, as opposed to the problem of low yield and poor quality coffee beans from old trees. This process is a basic condition for sustainability.

Our fair price policy for quality products is a far-sighted assessment of our strategic vision for the future of quality coffee. We also care about supporting our farmers in this process with seedling support and long-term purchase agreements and early payment options.

Coffee Harvest

The coffee fruit ripens gradually. Raw and ripe fruit coexist on the same branch and the ripening red berries need to be harvested one by one with selective care. A wholesale harvest, called stripping, mixes the raw fruit with the ripe fruit. The result is a coffee bean with no identity, no quality and a strange aromatic flavour.

Unfortunately, there are farmers who harvest early with the ‘stripping’ method in order to reach early financing. In order to overcome this problem, we closely follow the whole process and before each product purchase, we have a cupping test to measure the values of the product by our SCA (Specialty Coffee Association) approved contracted team mate. We also raise awareness of our farmers about the benefits of picking ripe coffee cherry.

Processing and Drying Process

Ripe cherry coffee is generally dried in the fresh air. The drying process needs to be monitored very carefully to ensure that it dries evenly. For this reason, the product should be turned upside down periodically and should not be exposed to rain. Unevenly dried cherry coffee cannot be roasted properly even in the best roaster’s roastery due to the unbalanced humidity.

Properly dried cherry coffee is peeled and sent to washing stations for processing. This process is a valuable stage for the product to find it’s true character. The processed product is dried again and dried until the moisture content reaches a level acceptable to the SCA. If the product is not sufficiently dried here, the aromatic values of the coffee bean will be severely weakened if it is subjected to a second drying process.

Apparently, quality coffee is the result of a complete process. Each stage enhances or hinders the other. An improperly dried cherry coffee undermines the washing process and the product does not reach its true brightness. Or a poorly organised washing station can make even the ripest fruit indistinguishable. Each stage of a properly organised process brings out the true quality of the coffee.

Packaging and Storage

After the green coffee beans are left from the washing station, they are dried again and the defective beans are manually cleaned by women, then packed according to their grades and kept ready for transport in suitable warehouses.

Storing and preserving coffee under the right conditions means preserving its initial quality. In this respect, we store coffee ready for export in cool warehouses with high ceilings. As an additional measure, we use protective packages called grainpro to protect the coffee from external influences.
